From Taste Tests to Blissful Bites: Our Flavour Creation Process Unveiled

You know, having exceptional taste is not something that happens by accident. Well, sometimes it does, like when you’re at a family party, feeling a bit greedy, and decide to pop both an artisan cheese and a spicy chicken skewer into your mouth at the same time. Suddenly, a burst of flavour fills your senses, and it’s pure magic. But when it comes to wedding cakes, that kind of culinary delight doesn’t just happen on its own.

In fact, our process is anything but simple. It’s long, rigorous, and intense. We pour our hearts and souls into creating a taste experience that will leave you and your guests in awe. Each bite has to be absolutely perfect, and let us tell you, that takes some serious hard work.

How Do We Come Up With Our New Flavours?

Coming up with new flavours for our wedding cakes is an exciting and creative process. It all starts with inspiration, which usually strikes when we’re eating or drinking something delicious. Obviously.

Whilst we’re enjoying that moment of bliss, we think “Wow, this is too good to not have in a wedding cake.”

For example, Heidi has only just discovered Chai Tea (late to the party we know) and whilst she was sipping, it suddenly sparked an idea – “Why not incorporate this incredible flavour into a wedding cake?”

From there, we’d research and investigate the unique spice mix that gives it its distinctive taste. Create our own signature spice blend and begin the long, arduous process of testing and refining the recipe. Our family and friends love this part because it means endless amounts of free cake.

What Does The Testing Process Look Like?

Let’s take the example of the brown butter honeycomb cake. We made a total of nine versions to perfect it. The base of the sponge involves butter and buttermilk and we refined it until it had a dreamy red velvet-like texture. The process was no different for the honeycomb component. We had to test it multiple times to strike the ideal balance of sweetness without overpowering the other flavours or making the cake too heavy.

Not only do we consider the flavours, but also the textures. We started with Swiss meringue buttercream but found that it was too fluffy when paired with the sponge’s super light texture. So, we went back to the drawing board and refined the buttercream to complement the overall mouthfeel of the cake.

The testing process can be lengthy at times. Some recipes come together effortlessly, while others require extensive experimentation. For instance, developing the perfect brownies took six months to perfect. We experimented with different baking times, temperatures (tweaking the temperature by as little as 5 degrees, along with timing adjustments of just 2 minutes each time), and shelf placements in the oven.

In our quest for exceptional ingredients, we value local producers, suppliers and award-winning ingredients. Nielsen-Massey Vanilla Extract is a favourite among chefs, and we’re fortunate to have a local deli nearby that stocks products from local makers, including their incredible conserves.

SET YOUR BUDGET

Before you do anything else, it’s important to decide on a budget for your wedding. Think carefully about how much you can afford and are willing to spend, but be realistic.

Make a list of your priorities – what are the most/least important elements for you as a couple for your wedding.

Typically, the majority of your wedding budget will be spent on venue hire and catering, with the rest of your budget spent on flowers, photographer, stationery and so on. You may also want to have a separate honeymoon budget.

HIRE A PROFESSIONAL WEDDING PLANNER

Weddings are complex events with a lot of moving parts, and working with someone who understands who can relieve you of some of the wedding planning pressure, makes a huge difference to your well-being and the overall experience you’ll have.

While you might not think your budget will stretch to hiring a professional, it is always worth asking the question. Your wedding shouldn’t be stressful, it should be an enjoyable experience (for you and your guests) and if the planning is causing you stress and worry, it’s worth the investment to hire a Wedding Planner.

Once you’ve decided on your wedding date, start creating a timeline of tasks that need to be completed leading up to the wedding day. This will include booking suppliers, sending out invitations, and scheduling dress fittings. If you work with a Wedding Planner, they will normally do this for you.

Choose Your Venue

Think about the style of venue you’d like for your wedding, there are lots of options out there so spend some time researching venues and the style of wedding you’d like – this will set the tone for your entire wedding. Look for venues that fit your budget, style, estimated guest numbers and ensure they have availability on your chosen date.

Draft Your Guest List

Start working on your guest list, bearing in mind your budget and venue capacity. Be mindful that whilst it would be wonderful to have every person you know attend your wedding, each guest costs you money so be sensible.

The more guests you have, the more expensive your wedding will be – adding on 5 or 10 guests might not seem a lot, but the costs add up quickly once you’ve added in additional costs for tables and chairs, crockery and glassware, stationery and floral arrangements.

CHOOSE YOUR SUPPLIER TEAM

Once you have confirmed your date and venue, start researching suppliers to make up your supplier team. Begin with researching photographers, florists and caterers (if your venue doesn’t provide), as these are your core suppliers.

Social media is a great tool for following and engaging with your favourites; read reviews and ask for referrals from friends and family. Your venue might have a recommended supplier list which is always a great place to start.

CHOOSE YOUR WEDDING PARTY

Decide on who you want to stand with you by your side on your wedding day, and ask them to be in your wedding party.

CHOOSE & SEND YOUR INVITATIONS

Choose your wedding invitation design, and send out invitations to your guests. Ensure to include a RSVP date so guests know when they need to come back to you.

If you have lots of guests who live abroad/outside the area, and who will be travelling to the wedding, sending Save The Dates is a good idea also.

START SHOPPING

Start shopping for your wedding outfits, as well as accessories such as jewellery, shoes and wedding rings. Book in for dress fittings and suit alterations too.

FINALISE THE DETAILS

In the weeks leading up to the wedding, finalise all your plans and details and share them with your venue and supplier team. Create a wedding day timeline and share it with your wedding party and family.

Your wedding is about the two of you, and the beginning of your lives together; it’s a special day to celebrate your love for each other and your relationship. Make sure planning your wedding doesn’t take over your life, or your relationship – having a Wedding Planner on board to support you both is really worth their weight in gold.

The Wedding Cake Design

Firstly, have a think about what type of wedding you are having or how you want it to feel – is it a formal affair in a grand venue, or is it a relaxed intimate venue, maybe you have chosen to go a bit more rustic? This can influence your choice of the type of cake design you go for.

Then, think about the time of year you are getting married and perhaps the practicalities of that – a buttercream covered cake in a marquee in mid August could lead to disaster – always ask your cake designer for advice, they are the experts! Also think about how many guests you will be having and how you will be serving the cake (will it be the dessert after your meal or will it be served with coffee/evening buffet?) .

Have a look at designs on Google/Pinterest and see what you are drawn to – what styles do you like and what don’t you like?

Is cake very important to you? Do you want it to be a centrepiece and talking point of the day and beyond!?

Think about where it will be displayed within the venue too and for photographs – its really sad when a beautiful cake is placed in an odd corner of the room next to a fire extinguisher/ugly curtain or radiator! (Yes, this does happen – even in 5* venues, so make sure to discuss it with your planner/venue co-ordinator).

The Cost of Wedding Cakes

Think about how much you want to spend on your cake and how this might affect the type of design you choose to go for – for example, a cake that has lots of sugar flowers will cost considerably more than a semi naked cake with fresh flowers. Be realistic – remember that wedding cakes take many hours of work, often 3/4/5 days, so do take this into consideration and don’t believe the “average” price for a wedding cake that you may see written in many places – unfortunately, wedding cakes are anything but average!

Tasting – The fun part!!

A question we get asked a lot is if you can have different flavours in each tier – yes, you can! You could choose a “crowd pleasing” flavour for one of the tiers and then something more exciting/unusual for other tiers if you wish.

Most cake designers do cake taster boxes or have tasters available during your consultation, there is often a charge for this and its usually stated on the designers website. Once you’ve had the chance to try, you know that you’re happy with the taste and then you’ve got the difficult task of deciding which one to go for!

Choosing a wedding cake designer

There are many cake designers out there – where to begin!

Do a little online research – look for someone either local to you or to the venue (who will also usually have a recommended supplier list) look at their reviews and the work displayed on their website/social media – do they make the types of cakes that you are drawn to?

Visit a wedding fair and have a chat to the cake designers there – did you ‘click’ with any of them? Did they give you confidence? Did they come up with some good suggestions?

Sending an email to a cake designer – in the first instance, its important to include your wedding date and venue, so that they can check their availability. Then offer as much detail as you can – number of guests, styles of cakes that you like, how you are going to serve the cake etc – it will speed up the process and make it much easier for you with less emails back and forth! I believe that you can get a ‘feel’ for a person from emails, so make sure you are happy with their responses, you want to feel confident!

Every designer runs their business differently, but most offer consultations with tasters either online or in person – be sure to attend one and check you are happy with everything – then book your designer with a booking fee and you are sorted!
